Alexander Pierce Anderson

Alexander Anderson was an American inventor and botanist whose discovery and patenting of the process of "puffing" cereal grains earned him a place in history and in popular culture. Originally, the Quaker Oats Co. used his name ("Professor Anderson") in promoting its Puffed Rice product. His first invention (a balance design purchased by Bausch & Lomb Co.) was patented while he was still an undergraduate at the University of Minnesota, and he continued to invent and file patents his entire life. Anderson began his academic career at Clemson Agricultural College, then moved to New York to continue his research at Columbia University and the New York Botanical Garden, where he came up with the solution to puffing rice in 1901. Three years later he exhibited his new method at the St. Louis World's Fair and caught the attention of the Quaker Oats Co., which partnered with him and encouraged further research on rice and other cereals. Anderson continued to improve his processes for decades to come, and we now have puffed wheat and other puffed cereals.
